“Our vision is to elevate the awareness that our traditional local cuisine can be prepared with passion and creativity, and served as refined gastronomy in an elegant setting. The key lies in high-quality ingredients and meticulous preparation, showcasing the distinctiveness of our cuisine,” says Chef Portelli.

The new summer menu presents an enticing selection of traditional dishes with a creative twist. From a vegetarian, French-inspired “Terrine” featuring Belgian caviar as an appetizer, to a pasta offering called “Caramelle” that adds a new look to the dish. Local classics like traditional parsley dough with rabbit filling and Gozo cheese fondue, as well as Jerusalem artichoke with black truffle nestled in a potato nest with garlic and hazelnuts, are Chef Portelli’s personal recommendations. Not to be missed is the legendary sweet version of Gozo Gbejna, an exquisite sheep’s cheese mousse with pear gel, carob base, organic lemon oil, pistachios, and sweet bread.
