A Vision Years in the Making

Josh and Julie Niland, the culinary visionaries behind Saint Peter, have embarked on their first venture as hoteliers with The Grand National. This project represents the culmination of a journey that began in 2018 when building owner George Penklis envisioned revitalizing the historic 1890s structure. Originally a cherished neighborhood pub, The Grand National has been lovingly restored, preserving its heritage while transforming into a contemporary hospitality destination.

Design Rooted in History and Innovation

The hotel’s interiors, crafted by Belinda Chippindale and Dimity Chitty of Studio Aquilo, blend timeless charm with modern sophistication. With input from the Nilands, the design team restored original features such as marble fireplaces and vintage tiling, preserving the building’s historic character. Upstairs, the 14 guest rooms showcase vibrant aesthetics with bespoke elements like velvet headboards, intricate wallpapers, and maximalist carpets. Luxurious down duvets by Bonny and curated artwork from Olsens Gallery further elevate the guest experience, while the inclusion of fish-fat candles and fish bone ceramics reflects Chef Niland’s innovative whole fish philosophy.

“When approaching the hotel, we paid as much attention to detail to the design and furnishing as we did with the restaurant,” says Julie Niland. “This is our first venture into being hoteliers, and we knew that we wanted to apply the same level of care to the rooms so that they weren’t just an addition to Saint Peter but a destination in their own right.”

Josh Niland adds, “Opening the hotel allows us the opportunity to fulfill our vision of hospitality beyond dining into a thoughtful 360-degree hotel experience, from handmade chocolates on your pillow to the breakfast cooked by our team.”
